Knowing that they love prunes as much as we do, we asked our TBF employees to send us their favorite recipes using our pitted organic prunes. Pam, our A/P & A/R Specialist, shared her favorite breakfast and snack recipe. If you have ripe bananas laying around, you’re going to want to make Pam’s Prune Banana Muffins. According to Pam and her taste-testers, these muffins are “delicious, sweet, spicy, moist, and very satisfying.”

Ingredients
- 1 cup chopped pitted TBF prunes
- 1 cup mashed bananas
- 1-1/2 cup gluten-free all-purpose flour
- ½ cup white sugar
- ¼ cup olive oil
- 1 egg
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ¼ teaspoon cinnamon
- ¼ teaspoon nutmeg
Directions
Preheat oven 350 degrees F. Prepare muffin pan with paper liners or grease & flour.
In a large bowl, combine wet ingredients: olive oil, egg, mashed bananas & vanilla extract. Beat until smooth.
In a medium bowl, combine dry ingredients: sugar, flour, baking powder, baking soda, salt, cinnamon, & nutmeg. Whisk until blended.
Mix wet & dry ingredients together until smooth.
Fold prunes into the mixture. Once combined, spoon mixture into muffin pan.
Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Note from Pam: These are wonderful muffins. If desired, add nuts!
