Prunes in the NY Times

In 2017, the New York Times printed the article "In Praise of the Prune" in their Sunday magazine. The writer, Teja Rao, understands what it's like to enjoy a quality prune.

"In most parts of the world, including the small town east of Paris where I lived as a kid, prunes were never a punch line. Good prunes were considered a serious craft, a worthy, occasional expense, a perfectly conventional thing to love. They’d be simmered with game, whipped into a boozy mousse or slipped into baggies to eat as a snack."

Fudgy Prune Brownies

We love baking with Taylor Brothers Farms prunes! Not only do prunes help add moisture to baked goods, but because of their natural sweetness and texture, they also help reduce the amount of sugar and fat used in your typical brownie recipe. Check out this recipe for the ultimate sweet treat.

Serves: 16 | Prep Time: 10 min | Cook Time: 30 min

Ingredients

  • Cooking spray
  • 1/2 cup Taylor Brothers Farms prunes
  • 3 tbsp. water.
  • 8 ounces semisweet chocolate
  • 1/4 cup butter or coconut oil
  • 1/2 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup all-purpose flour
  • Pinch of salt
  • Optional: 1/2 cup coarsely chopped walnuts

Directions
Heat oven to 325ºF.  Spray an 8- X 8-inch baking pan with cooking spray and line with parchment paper, leaving the paper overhanging on 2 sides; spray paper with cooking spray.

In a food processor or high-speed blender, process prunes and water until puréed. Set aside.

In a large heatproof bowl, melt chocolate with butter/oil over simmering water. Whisk in sugar and dried plum purée until mixed; whisk in eggs and vanilla. Fold in flour and salt just until blended; fold in walnuts. Scrape batter into prepared pan, spreading it evenly. Bake about 30 minutes or until a cake tester inserted into the brownies comes out clean. Cool in pan at least 10 minutes; remove from pan and cut into 2-inch squares. Enjoy!
